Yogurt Scones
(From Mollie Katzen's Still Life With Menu:)
Sift together:
3 cups all purpose flour (or, alternatively, 1 1/2 cups all purpose and 1 1/2 cups whole wheat)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Cut in
6 tblsp cold butter
2 tblsp packed brown sugar
until the mixture is the texture of coarse meal (use your fingers) - kind of crumbly looking.
Beat together
1 1/4 cups plain yogurt
1 egg
in a separate bowl. Add to dry mixture, along with 1/2 cup raisins (or more?) and quickly mix together. Will be /wet/. Don't worry about this.
Drop on cookie sheet in amorphous, alienlike globs. Bake for 15 minutes at 350F.
Best. Scones. Ever.
