I'm (trying to be) on Core for Weight Watchers and Canadian Bacon is one of the meats I can have. I usually have a couple of pieces in the morning with eggs and potatoes or grits. However, I've never heard of the cornmeal you mentioned!

We were told when I worked at Domino's Pizza that we didn't have canadian bacon, we had ham. Why? Because ours weren't round - they were cut into quarters.

None of the above? I'm very familiar with Canadian bacon, but I don't think I'm accustomed to seeing it on anything. They don't seem to serve it as a default on anything at all in Canada. I mostly encounter it when I'm in the U.S.

Eggs benedict and other breakfast dishes. My patetnal grandmother (second-generation Irish from Dunkirk, NY) used to serve it at special breakfasts.

Eggs Benedict, or just as a breakfast side, and I use it to make stuffed French toast: Two pieces of bread (preferably my homemade challah!), Canadian bacon and swiss cheese between the slices, dipped in egg batter (egg, milk, a bit of sugar and a hit of cinnamon and nutmeg) and fried slowly in butter so that the cheese has a chance to melt. Served with *real* maple syrup? Oh. My. God.
