gf pastry/cake flour definitely exists. this I know because a) I have eaten things made of it and b) my pastry-chef ex wants to open a vegan gluten free shop.

therefore, tasties are possible!

but not if you don't HAVE the flour! oh well.

Oh, yes, it exists, both as a pre-made mix and as a mix you can make up yourself using different proportions of flours like tapioca and potato. But, because it lacks gluten, you often have to revise the rest of the recipe to account for differences, or you might end up with a dense, dry mass of ick. (I've heard tell of mythical pre-made flours which can be substituted one-to-one with regular flours, but, um...they are apparently rare.)

And yes, it's way easier if you actually have the damn stuff. Luckily I can have a little wheat flour and I won't die.

pastrymaking is only minimally dependent on gluten, so :)
if I were going to try to do something gluten-free, it'd be something on the pastry end of the scale, as opposed to the bread'n'bagels end.

i've done corn scones and muffins and they both turned out Seaners-approved. <3 and there are a million great gf cookies and brownies you can make from mixes if you're lazy - Trader Joe's makes an /awesome/ gf brownie mix.

I do the cake thing (or did) with cake mix, in my bowl/mug. Always good. :) I even do up a little buttercream icing with butter, cocoa, and icing sugar. Can't beat it. Nomnom.
