A few people posted on my friends list saying that they were really offended by someone blessing them without asking first, joke or not.

That completely baffles me. In my mind it's the intent behind it, not the wording. If the intent is 'I'm going to convert you', that's one thing, but if the intent is 'have a good day', that's entirely different.
